Matcha White Chocolate Ganache

Matcha White Chocolate Ganache

Ingredients

(Ganache)
50g chopped white chocolate
15cc heavy cream
3g matcha
3cc rum

(Coating)
50g white chocolate
3g matcha

Instructions

  1. Place the chopped white chocolate in a bowl and microwave on medium until softened. Heat heavy cream until warm and whisk into the softened white chocolate until smooth. Add matcha powder and rum and mix thoroughly.
  2. Pour the mixture onto a sheet pan (10cm X 8cm) and refrigerate overnight to harden.
  3. Take out the hardened chocolate, and cut into bite size pieces.
  4. For the coating, temper the white chocolate until creamy, and mix in the matcha powder until smooth.
  5. Dip the chocolate pieces in the coating and refrigerate to harden.

Ingredients

100g chopped white chocolate
5g matcha
100g sugar coated cornflakes

Instructions

  1. Crush the cornflakes into small pieces.
  2. Temper white chocolate.
  3. Stir in matcha powder until smooth.
  4. Add the crushed cornflakes and mix until thoroughly combined.
  5. Place the mixture onto a sheet pan (22cm X 14cm) and let cool to harden.
  6. Cut into bite size pieces.

Matcha Pound Cake

Ingredients

60g butter, softened
50g powder sugar
1 egg, beaten
10cc milk
60g cake flour
5g matcha
2g baking powder
30g boiled azuki red beans (optional)

Instructions

  1. Sift cake flour, matcha and baking powder.
  2. Put soft butter in a bowl and mix well until white and fluffy. Then add powder sugar and mix well.
  3. Pour beaten egg and then milk in several batches and mix well.
  4. Fold in Step 1 sifted ingredients in about 3 batches with a spatula.
  5. Put boiled azuki red beans, mix gently (optional).
  6. Pour the batter into pound mold (350ml) lined with baking paper.
  7. Bake in 150℃ pre-heated oven for about 25 min, depending on oven.

Matcha Chocolate Dipped Nuts

Ingredients

50g chopped white chocolate
3g matcha
nuts (almond, cashew nut, walnut etc.)

Instructions

  1. Temper white chocolate.
  2. Add matcha to stir well.
  3. Dip nuts and place on a tray to chill in the refrigerator.
